A few weekends ago, a close friend of mine invited a group of girls to her lovely cabin in the woods. She is always a great hostess and always shares her talent for healthy, yummy food. She is by no means a culinary chef and her food is never “foo foo” or gourmet, so I appreciate her delicious food ideas even more because they are tasty, healthy and most important to all busy moms and people – SIMPLE.
Saturday morning, we awoke to something I would typically only eat if I were trying EXTRA hard to be healthy, but after eating it, it is now one of my favorite eats. It is tasty, easy, and for those of us looking to consume nutrient-dense food, with low calories and lots of bites – it’s awesome!
You can choose a variety of different brands and fruits to do this with, but I LOVED it just as it was, so I’ll pass it on in it’s original form:
- 1 Carton vanilla CARBmaster yogurt (Kroger brand)
- ¾ Cup organic antioxidant blend frozen berry mix (from Costco)
- 2 Tablespoons Grapenuts cereal
- A sprinkle of cinnamon
Layer yogurt, frozen fruit and granola, sprinkle with cinnamon. The frozen fruit takes on a slushy cool taste against the yogurt and the grape nuts are a cool variation from granola with the perfect crunch. It’s so DELISH, takes a LONG time to eat, nutrient dense and low in calories – ENJOY!
It only has 150 calories, 8 grams protein, and 1.5 grams of fat!
