Okay guys, I have a recipe for you today that is sure to be a hit! Not only is it delicious, but it’s packed with protein and has only three ingredients. But before I share the recipe with you, lets talk about pancakes.
I used to not be much of a pancake fan. For one, they took too long to make and for two, they were higher in sugar and calories than say, scrambled eggs or oatmeal, so I avoided them. Then, I got pregnant and found myself craving pancakes with peanut butter and syrup all the time. I could have eaten them all day long. Since then, I enjoy eating pancakes more often but still mostly shy away for the same reasons as before. So, coming up with a faster and healthier recipe was a must for me. It was only an added bonus that I found a way to enjoy a few of my favorite flavors all wrapped into one delicious dish and was still able to call it “healthy.” Behold: Chocolate Protein Pancakes with Chocolate Peanut Butter Frosting!
Yeah, that’s right – melt-in-your-mouth goodness (and just wait until you see how easy these are to make)!
Chocolate Protein Pancakes
- 1 Small Mashed Banana
- 1 Egg White
- 1 Scoop Fitmixer Chocolate Protein Powder
Heat a medium skillet over medium high heat. Coat with cooking spray or butter. In a bowl, mix mashed banana, egg white and protein powder. Scoop into skillet, spreading to create a small pancake-disk. Cook on each side for 2-3 minutes. Serve warm, topped with Chocolate Peanut Butter Protein Frosting or your choice of toppings.
Chocolate Peanut Butter Protein Frosting
- 1 tsp. Fitmixer Chocolate Protein Powder
- 1/2 tsp. 100% pure maple syrup
- 1 tsp. All Natural Peanut Butter
- 1 1/2 tbsp. Unsweetened Almond Milk, Coconut milk, or low-fat milk
Whisk all ingredients in a small bowl and drizzle over Chocolate Protein Pancakes.

These pancakes are so delicious and very filling. Plus, since they are filled with protein, they will give you plenty of energy to make it through the day! These have definitely been a huge hit in our house, especially with me since they fill that pancake craving without all the extra calories and sugar.
