There are some wonderful foods that are great for us, but that we only tend to enjoy one or two ways. For example, leafy greens are normally enjoyed in salads, eggs are usually enjoyed for breakfast, and avocados tend to be eaten in guacamole. However, there are many different ways we can enjoy these healthy-for-us foods. Leafy greens can be added to smoothies, eggs can be added to oats, and avocados can be turned into a delicious pudding. Wait – what? Avocado pudding? That’s right folks. These green, heart-healthy fruits can be transformed into a tasty bowl of sweet pudding! I’ll tell you how in a minute, but let’s first talk about why avocados are so good for us. Avocado is a fruit that people often shy away from because of the amount of fat. However, “when eaten in place of unhealthy saturated and trans fats, monounsaturated fats lower total cholesterol and LDL, or ‘bad’ cholesterol levels.” Avocados are rich in Vitamin B6 and Folate which support heart health while also reducing your risk of stroke and heart attack. They contain Potassium and Vitamin E, which according to the American Heart Association, are effective in promoting heart health. Lastly, avocados are high in Fiber, which we all know is essential in digestive health. Along with that, it also helps to lower blood cholesterol levels.
So, now that we know why avocados are so good for us, let me share a delicious way to eat them (that I promise you’ll enjoy)!
Dark Chocolate Avocado Pudding
- 1 Cup Diced, Ripe Avocado
- 1 Scoop Chocolate fitmixer slim® or 1/2 Scoop Chocolate fitmixer protein® Powder
- 2 Tbsp. Cocoa Powder
- 1-2 Tbsp. Unsweetened Coconut Milk, Unsweetened Almond Milk or Low-fat Milk
- Optional – 1 tsp. Honey, 100% Pure Maple Syrup or Stevia
Place avocado into a food processor along with the remaining ingredients. Puree until a smooth, creamy mixture forms, while scraping down the sides throughout. You want it to be nice and smooth without any chunks so you might have to scrape and mix several times. If it’s not sweet enough for you, add in a tsp. of honey, stevia, or 100% pure maple syrup. Scoop into a bowl and enjoy! Don’t let the calories and fat keep you from eating this delicious treat. Remember, it’s the good monounsaturated fat that is heart healthy and good for you!
