Whether my workouts are done early in the morning or later in the afternoon, I like to fuel my body with healthy carbohydrates and proteins to give me energy and stamina. Sure, there are tons of processed bars or energy products on the market that probably do well at giving you energy. However, they are also putting other substances in your body that you don’t need, substances such as high fructose corn syrup that make it more like a candy bar than a healthy protein/energy bar. Yes, they are quick and easy and, of course, there are some out there that are really good for you, but wouldn’t you rather be fueling your body with a fresh, healthy snack that you made yourself? One that is loaded with protein and carbohydrates to fuel you through your workout? A snack that is not only pretty good for you but also tastes delicious? If so, you HAVE to try this recipe for protein bites that you can enjoy as a healthy snack pre-workout, post-workout, or, well, any time of the day!
Lemon Blueberry Protein Bites
- 1 scoop Fitmixer Vanilla Protein Powder
- 1/2 cup Old Fashioned Oats
- 1/4 cup Raw Walnuts
- 1/4 cup All Natural Peanut Butter
- 1 tbsp. Honey
- 1 tbsp. Fresh Squeezed Lemon Juice
- 1 tsp. Grated Lemon Rind
- 1/4 cup Dried Blueberries
Place protein powder, oats, and walnuts in a food processor. Pulse until nuts are finely chopped. Add in remaining ingredients and puree until a sticky mixture forms – one that will stick and hold together when you roll into balls. If it seems too powdery, add another tbsp. of honey or peanut butter. Roll into small balls and store in the refrigerator for up to two weeks.
