Sometimes you just want to eat something HUGE. You are done with lunch, it’s 3:00 pm, and you don’t want to settle for that 150 calorie three-bite protein bar; you just want some substance, some volume… get what I’m saying? When this happens to me and I feel… well, maybe not starving, but kinda like I want to chew and eat something that makes me feel like I ate something, so I have my favorite “go to” snack. It looks like a lot to eat, it takes some time to eat it, and it’s totally nutrient-dense with very few calories (less than 150).
This is what I do: I take one cup of carrots, a whole cucumber sliced (leave the peel on), and about a cup of sugar snap peas. Once in a while, I’ll add a sliced tomato. I put it all into a bowl and add:
- 1 cup of vinegar
- 1 cup of water
- 2 tsp. olive oil (helps metabolize the fat soluble vitamins in the veggies)
- Some sea salt and pepper
I stir it all around and let it sit for a few minutes. Then, just like that, I have an amazing snack. It tastes really fresh, healthy and it totally satisfies my craving for eating something, well…huge. On top of that, it is less than 150 calories and has some pretty awesome nutrients!
