When fall rolls around I suddenly become obsessed with pumpkin. Pumpkin spice lattes, pumpkin candles, pumpkin bread, pumpkin cream cheese, the list goes on and on… One of my favorite protein snacks are protein bites that I usually make with nut butter, oats, protein powder and some mix-ins. Since it’s pumpkin time, I decided to try and combine my favorite snack with my favorite fall flavors. Behold, Pumpkin Pie Protein Bites, yum!!!! They turned out to be really tasty so I just had to share
Pumpkin Pie Protein Bites
- 1 1/2 cups old fashioned oats
- 1/4 cup + more if needed organic all natural peanut butter (any kind of nut butter would work, pecan would be really yummy!)
- 1/3 cup 100% pure maple syrup (you could also use honey or agave)
- 1/4 cup pure pumpkin puree
- 1/2 scoop Fitmixer Vanilla Protein Powder
- 1/4 cup chopped raw walnuts
- 1 1/2 tsp pumpkin pie spice
- 1 tsp vanilla
- 1/4 tsp sea salt
Place all ingredients in a large bowl or stand mixer and stir until a sticky batter forms. It should be wet enough to form into balls without falling apart. Form into 24 bite size balls and store in the fridge until ready to eat. Taste like pumpkin pie!

I did a rough calculation on my fitness pal and it was around 90 per protein ball
I think I could make lower by using more pumpkin puree and less peanut butter… Or, taking out the walnuts.
